Vada Pav



Vada pav, which is also known as the Indian Burger, is a vegetarian fast food dish native to the state of Maharashtra. The dish consists of a deep-fried potato fritter placed inside a bread bun sliced almost in half through the middle. It is served with fried chilis and garlic chutney.

Serves: 4 portions

 

INGREDIENTS

· Boiled potatoes 400gms

· Oil 25ml

· Mustard seeds 10gms

· Finely chopped garlic 10gms

· Finely chopped ginger 20gms

· Hing 5gms

· Turmeric 10gms

· Coriander 20gms

· Oil for frying 400gms

· Pav (bread) 8pcs

· Whipped salted butter 100gms

· Coriander chutney 70ml

· Fried green chili (accompaniment)

· Dry garlic powder (accompaniment)

Batter:

· Gram flour 200gms

· Salt 20gms

· Red chili powder 20gms

· Ajwain 10gms

· Fennel seeds 20gms

· Homemade ginger garlic paste 80gms

· Turmeric 10gms

· Dried onion powder 30gms

· Water as required

METHOD

1. Make a tadka(tempering) of oil and mustard seeds, garlic, chili, hing and turmeric

2. Add this tadka (tempering) to the boiled potato

3. Mix it well to make the stuffing of the vada pav

4. In a separate container, add the gram flour and all the spices as mentioned in the ingredient section

5. Add water to make a smooth batter with no lumps and coating consistency

6. Portion the potato mix in weight size of 40 gms

7. Make rounds of the potato mix and dip in the batter.

8. Deep fry

9. Remove from the fryer after the vada gets golden colour

10. Transfer to a kitchen towel so the excess oil drains out

11. Cut the pav 1X2

12. Apply whipped butter inside

13. Add the dry garlic chutney and place the fried vada inside.

14. Serve with fried green chilli, garlic chutney and coriander chutney
