Steamed Moongphali chaat with beetroot kosambir, sweet potato, pomegranate & mint is a local Maharashtrian salad. A dash of spice and lemon juice boosts its flavours, making this an irresistible snack. It is enjoyed hot and fresh by young and old alike!
Serves: 4 portions
INGREDIENTS
· Raw peanuts 75gms
· Sweet potato 30gms
· Beetroot 40gms
· Fennel 5gms
· Cumin seeds 5gms
· Curd 30gms
· Lemon 2pcs
· Black mustard 5gms
· Onion 15gms
· Tomato 15gms
· Coriander 10gms
· Oil 30gms
· Salt to taste
· Pomegranate 20gms
· Mint 5gms
· Saffron 5mg
· Coconut 30gms
· Curry leaves 5gms
METHOD
1. Chop onion, tomato, coriander and keep aside.
2. Poach sweet potato in saffron infused water.
3. Grate the beetroot and keep aside.
4. In a mixing bowl, mix curd, broiled mustard seeds, cumin seeds, salt and pepper. Add beetroot and mix.
5. Steam the peanuts in a steamer for 5 minutes.
6. Add the peanuts to the mixing bowl along with chopped onions, tomatoes, coconut, lemon juice, and mix.
7. Garnish with pomegranate and mint sprig.
