Pizza is most loved dish belonging to the Italian cuisine. My recipe consists of a square, flattened base of dough topped with tomatoes, onions, cottage cheese and bell peppers which is then baked at a high temperature.
Serves: 4 portions
INGREDIENTS
· Refined flour 1.1kg
· Sugar 6gms
· Yeast 8gms
· Water 600ml
· Salt 16gms
· Olive Oil 50ml
· Pizza sauce 600gms
· Cottage cheese 80gms
· Mozzarella cheese 600gms
· Capsicum 80gms
· Onion 80gms
· Tomato 80gms
· Salt 5gms
· Pepper 5gms
· Basil leaves 5gms
METHOD
1. To make the pizza dough, take the flour in a bowl. Make a small gap in the centre and add the yeast and sugar. Cover it up with flour. Wait for some time to activate the yeast. Cracks will start appearing on the flour covered part.
2. Once done, add salt and oil in it. Add water and start kneading the dough. It should be a soft dough.
3. Divide into balls of approximately 200 gm each.
4. Cover it with a wet towel and allow it to rest. (Proofing the dough)
5. Take a dough on a flour dusted bed and roll it out evenly. You can use your hands as well.
6. Place the rolled dough on a baking tray and smear a generous quantity of the pizza sauce.
7. Add grated cheese on top.
8. Add thin slices of capsicum, onion and tomato.
9. Add salt and pepper to taste. Sprinkle some shredded Basil leaves.
10. Bake in a preheated oven for 250°C for around 10 minutes.
11. Serve hot.
CHEF’S TIPS
1. You can add more vegetables if desired. Thinly sliced zucchini, mushroom, bell peppers make a good combination.
2. Choice of meat can be added if you desire a non-veg pizza.
