Vegetable Lasagne is an Italian pasta dish where vegetable is mixed with sauce and layered in between the lasagne sheets, and then baked.

INGREDIENTS
· Fresh Button Mushrooms 400gms
·Basic pasta dough 600gms
· Yellow zucchini 400gms
· Carrot 400gms
· Thyme 10gms
· Salt 20gms
· Black pepper whole 10gms
· Green zucchini 400gms
· Tomato sauce 400gms
· Basil 30gms
· Basic pasta dough 400gms
· Artichoke hearts 300gms
· Bechemel Sauce 200ml
· Parmesan cheese 70gms
· Mozzarella 300gms
· Ricotta cheese 300gms
· Olive oil 80ml
· Cherry Tomatoes 50gms
METHOD
1. Marinate all the vegetables with salt, pepper and thyme and roast them individually in the oven.
2. Marinate tomato petals with basil, salt and pepper and put for slow roasting.
3. Marinate washed artichoke with thyme, salt and pepper and grill.
4. Butter the baking tray and start the layering of pasta sheets and grilled vegetable
5. Make alternative Layer of vegetable, cheese and pasta in the baking tray
6. Finally spread béchamel and parmesan on top sheet and bake in oven.
7. Use cherry tomato and broccoli sauce for presentation.
