Pasta in Arrabiata Sauce

Arrabiata sauce is a spicy Italian sauce for pasta made from garlic, tomatoes, and dried red chilies. Pasta arrabiata literally means “angry pasta” in Italian, because of the spicy flavour.

Serves: 4 portions

 

INGREDIENTS

  • Pasta 600gms

  • Arrabiata sauce

  • Chopped garlic 60gms

  • Chili flakes 30gms

  • Tomato sauce 300gms

  • Vegetable stock 150ml

  • Olive oil 60ml

  • Basil 10gms

METHOD

1. Boil the pasta for 10 minutes in salted boiling water and strain the water. Keep some salted pasta water aside

2. In a separate pot, put oil, garlic and cook on low flame

3. Add the chili flakes and cook for 1 minute.

4. Add the sauce, salt and crushed basil

5. Add the hot pasta and finish the pasta with balance olive oil.

6. Serve hot with garnish of fresh basil
