Kathi rolls are a unique street food from Calcutta. It consists of a crispy lachcha paratha with delicious stuffing and sauces inside.
Serves: 4 portions
INGREDIENTS
· Lachcha paratha 4pcs
· Oil 30gms
· Cumin seeds 5gms
· Paneer 300gms
· Onion 50gms
· Capsicum 50gms
· Tomato 50gms
· Ginger paste 5gms
· Garlic paste 5gms
· Chilli powder 5gms
· Cumin powder 5gms
· Salt 5gms
· Turmeric 3gms
· Kasundi 60ml
· Ketchup 60ml
METHOD
1. Cut the paneer into slices.
2. Cut onion, tomato and capsicum in thin slices.
3. Heat oil in a pan and crackle the cumin seeds.
4. Add slices of onion, saute until golden.
5. Add ginger and garlic paste. Saute.
6. Add capsicum and saute. Lastly add the tomatoes and saute.
7. Add salt, cumin powder, chilli powder and turmeric.
8. Add a bit of water if desired. Cover and cook.
9. Add cottage cheese.
10. Once the mixture is ready, keep it aside.
11. Take hot lachcha paratha and spread kasundi and ketchup on it. Spread the mixture evenly inside it. Roll tightly.
12. Serve with onion rings and desired sauce by side.
CHEF’S TIPS
1. Make lachcha parathas freshly before making the roll.
2. You can add desired sauce like mayonnaise or ketchup inside the roll.
3. You can add chaat masala and lemon juice for a little tangy taste!
