Luchi


Deep-fried flatbread made of refined flour, originating from Eastern India

Serves: 4 portions

 

INGREDIENTS

· Refined flour 1kg

· Vegetable shortening 200gms

· Salt 10gms

· Water 500ml

· Oil for frying

METHOD

1. Sieve maida and salt together.

2. Add in the melted vegetable shortening.

3. Add water and make soft pliable dough.

4. Rest the dough for a while and portion the dough in 50gms each.

5. Flatten each ball and roll it on an oiled surface.

6. Fry the luchi in a kadhai with oil in medium high temperature; till puffed and cooked.
