Chowk ki tikki or Aloo tikki is a snack made of boiled potatoes and several Indian spices. It can be eaten with chutney or put between burger buns to make a lip-smacking vegetarian burger.
Serves: 4 portions
INGREDIENTS
· Boiled potatoes 1kg
· Rice flour 50gms
· Salt to Taste
· Green peas 200gms
· Green chili chopped 20gms
· Ginger chopped 10gms
· Coriander chopped 20gms
· Lemon juice 5ml
· Cashew chopped 50gms
· Raisins chopped 20gms
· Ghee 40ml
· Hing 5gms
METHOD
1. Heat Ghee in a pan; add hing, ginger, green chilli and saute.
2. Add crushed green peas and saute.
3. Add salt, cashew, raisins and stir coriander and mix.
4. Add lemon juice and mix. Switch off the flame. Let the filling cool down to room temperature.
5. Mash the potatoes Add rice flour, salt to mix well to form a dough.
6. Grease your hands, flatten each ball and stuff 1 spoon of filling
7. Now with greased hands gently press the balls to form thick patties.
8. Heat Ghee in a pan, shallow fry the patties evenly on medium to low
heat to a golden brown and crisp outer cover.
9. Serve with mint, tamarind chutney and sweetened curd.
