Traditional Kashmiri spice mix
Serves: 4 portions
INGREDIENTS
· Kashmiri red chili powder 100gms
· Garlic 50gms
· Onion 50gms
· Fennel seeds 25gms
· Hing 5gms
· Cloves 5gms
· Green cardamom 10gms
· Black cardamom 10gms
· Cinnamon 5gms
· Shahi Jeera 5gms
· Garam masala 10gms
METHOD
1. Dry roast all the spices.
2. Mix all the ingredients and make a thick paste.
3. Make small, fat cakes out of the paste, dry them and keep them for further use.
