Vegetable Toastie


This toasted sandwich is loaded with vegetables and healthy ingredients. A perfect evening snack option prepared in a matter of minutes!

Serves: 4 portions

 

INGREDIENTS

· Bread 8pcs

· Butter 30gms

· Water 500ml

· Potato 300gms

· Oil 50ml

· Onion 120gms

· Chilli 8gms

· Cucumber 80gms

· Salt 5gms

· Mayonnaise 60gms

· Cumin seeds 3gms

· Cumin powder 5gms

· Chilli powder 5gms

· Chaat masala 5gms

· Lemon juice 10gms

· Coriander leaves 5gms

· Cheese 4 slices

METHOD

1. Take a sauce pan, add water, salt and potatoes to boil.

2. Once the potatoes are boiled, grate or mash them in a bowl. Keep aside.

3. In a pan, heat oil and add cumin seeds to it.

4. Add chopped onions and chili in it.

5. Add salt, cumin powder, chili powder and saute.

6. Cool this mixture and add it to the potato mash.

7. Add chaat masala, lemon juice and chopped coriander leaves. Mix well and keep aside.

9. Smear a good quantity of mayonnaise on one side and mint chutney on the other side.

10. Spread the potato mixture on one side, add slices of cucumber and onion rings on top.

11. Add slices of cheese and cover with the other bread.

12. Cook the sandwich in a toastie maker

13. Cut into half and serve hot!

CHEF’S TIPS

1. A toasted vegetable sandwich can be made with any ingredients of your choice. Like slices of beetroot and tomato can be added.

2. Instead of a potato mash, you can use boiled and mashed sweet corn.

3. Once the sandwich is ready, you can reheat the sandwich in a preheated oven or on a flat pan over a low flame.
