Wadi Pulao


A delicious and aromatic rice dish made with lentil dumplings.

Serves: 10 portions


 

INGREDIENTS

· Basmati rice 800gms

· Urad dal Amritsari wadi 20pcs

· Peas 100gms

· Ghee 150gms

· Bay leaves 5pcs

· Cloves 10pcs

· Turmeric powder 5gms

· Cinnamon 4pcs

· Green cardamom 10pcs

· Black pepper 20pcs

· Onion sliced 500gms

· Salt To taste

· Ginger paste 50gms

· Green chili paste 100gms

· Garam masala 5gms

· Lemon juice 50ml

· Water As required

METHOD

1. Heat ghee in a copper pan. Add wadis and shallow fry for minute. Remove from heat and cool.

2. Heat ghee in a brass handi. Add cinnamon, cloves, green cardamom, black pepper corns and bay leaves and sauté.

3. Add onion mix and sauté till they turn translucent Then add ginger green chili paste. Now add peas, mix well and cook. Then add the rice and mix well. Lower the heat and add turmeric powder.

4. Add the fried wadi pieces and garam masala into the rice with water. Then add salt, lemon juice and mix well.

5. Cover the lid and cook the rice on low heat for rice is fully cooked.

6. Garnish with coriander leaves

7. Serve Warm.
