Veg Kolhapuri


Vegetable kolhapuri is a dish originating from the city of Kolhapur in Maharashtra. It consists of mixed vegetables in a in a spicy gravy.

Serves: 4 portions


 

INGREDIENTS

· Potato 70Gms

· Cauliflower 70Gms

· Beans 70Gms

· Carrot 70Gms

· Green Pea 70Gms

· Kashmiri Red Chili 18-20 No

· Coriander Seeds 10Gms

· Poppy Seeds 10Gms

· Sesame Seeds 10Gms

· Cumin Seeds 5Gms

· Black Pepper 5Gms

· Green Cardamom 5Gms

· Black Cardamom 3Gms

· Cloves 3Gms

· Mace 2Gms

· Cinnamon Stick 3Gms

· Fresh Grated Coconut 20Gms

· Onion 20Gms

· Ginger Garlic Paste 10Gms

· Tomato 20Gms

· Turmeric Powder 3Gms

· Red Chili Powder 10Gms

· Water As Required

· Salt To Taste

METHOD

1.Cut all the vegetables in equal sizes.

2. Heat a flat pan and dry roast coriander seeds with red chili powder for 3 minutes.

3. Add Sesame Seeds, Peppercorns, Cloves, Cardamom, Mace, Black Cardamom, Cinnamon, Poppy Seeds, Cumin Seeds and continue roasting for a few more minutes.

4. Add grated coconut and stir quickly to avoid sticking.

5. Switch off flame and let the mix cool down.

6. Grind the mix into a powder without adding water.

7. Heat oil in a pan. Add chopped onions. Wait for them to turn soft, then add ginger garlic paste.

8. Add chopped tomatoes and cook them till they get mushy.

9. Add all the other cut and cooked vegetables, turmeric powder, chili powder, salt and water.

10. After all the vegetables are cooked, add the powder mix created earlier for the gravy.

11. Let the gravy cook for 5 minutes and then add chopped coriander leaves.

12. Serve hot.
