Sarson Ka Saag (as it is known in Hindi, Urdu) or (Saroon Da Saag, in Punjabi) is a
popular vegetarian dish from the Punjab region of the Indian subcontinent. It is made
from mustard greens (Sarson) and spices such as ginger and garlic. It is often served
with makki di roti. Sarson Ka Saag and makki di roti with lassi is considered a special dish of
Punjab. It is eaten only in the winter season. It is served with makki roti, onions, and whole green chilies.
Serves: 4 portions
INGREDIENTS
· Mustard leaves (sarson) 350gms
· Bathua leaves 175gms
· Radish leaves 85gms
· Fenugreek 175gms
· Spinach 175gms
· Onion 175gms
· Tomato 250gms
· Ginger 20gms
· Garlic 40gms
· Whole red chili 15gms
· Hing 10gms
· Black pepper whole 10gms
· Maize flour 40gms
· Mustard oil 40ml
· Salted butter 100gms
· White butter 100gms
METHOD
1. Clean and wash the leaves and keep for drying
2. Cook all greens in a pan with covered lid and little water. Cool the blanched leaves
and make a paste
3. In a separate pan, heat oil, add the whole spices and allow to crackle and add whole
garlic pods and chopped ginger
4. Then add fresh onion paste cooking it further
5. Now add fresh tomato paste and cover with lid
6. Once the oil oozes out, add the paste of the green leaves
7. Cook it further and add the maize flour
8. Finish the dish with salted butter
9. Dish is ready when the excess water is dried.
10. Serve with white butter, gud, makki roti and hand crushed onion
