Phanu (Pahari-style Dal)


Phanu is a simple, basic food popular all over Uttarakhand. It is cooked during the winter season and is very good for your health too. It is a lentil curry made with soaked pulses.

Serves: 4 portions

 

INGREDIENTS

· Gahat (horse gram) 250gms

· Garlic 10gms

· Ginger 5gms

· Green chillies 4pcs

· Jakhaya (pahadi mustard) 2gms

· Cumin seeds 2gms

· Coriander seeds 4gms

· Turmeric 10gms

· Mustard oil 50gms

· Salt to taste

· Ghee 4gms


METHOD

1. Soak the gahat dal in water overnight.

2. Next day, wash the dal in running water so the covering is removed. Grind it in a mixer along with green chillies, ginger, garlic, dry coriander and dry turmeric to a thick paste.

3. Place a tawa on moderate flame. Add some oil and make thick pancakes with the lentil paste. Make sure to use only half of the paste.

4. Mix water with the remaining paste to make it of running consistency.

5. Heat oil in a pan. Add jakhaya seeds, cumin seeds, whole chillies. Now, add the paste, turmeric, coriander and salt. Add water and let it boil. Cover with a lid and cook it on low flame for 10 minutes.

6. Add the pancakes to the gravy and continue simmering.

7. Serve with pure ghee and chopped coriander leaves as garnish.
