Multigrain Litti Chokha


Litti is the stuffed whole wheat dough ball and Chokha is a mashed relish that is served with litti. Traditionally, Litti and Chokha both are roasted in cow dung cakes. Over the years, it has evolved with people adding new flavours to the cuisine and inventing their own renditions. It is also believed that Litti was first cooked in the Magadh kingdom before becoming popular in Bihar.

 

Serves: 4 portions

INGREDIENTS

· Multigrain flour 250gms

· Salt 5gms

· Water as required

· Oil 10ml

Filling:

· Sattu 50gms

· Salt 10gms

· Mustard oil 20gms

· Chopped onion 20gms

· Kalonji 2gms

· Ajwain 2gms

· Pickle 5gms

· Boiled potatoes 20gms

METHOD

1.To start with litti dough, put all the ingredients together and make dough. The dough should be tight. And keep it aside.

2. For sattu mix, put sattu in a pan and rest other ingredients and mix well. Check the salt.

3.Make a ball of atta dough and then hollow it from centre, put the sattu mix inside and close it nicely so that the stuffing doesn’t come out. Keep aside.

4.To start with chokha, chargrill tomato and brinjal, remove the skin. put it in a bowl and then pour rest of the ingredients. Mix it nicely and check the salt.

5.Roast or bake the litti on an open fire or in till it is cooked well.

6.Serve this dish along with a bowl of ghee
