Lemon & Honey Roast Chicken


Chicken marinated in lemon juice and roasted with a honey glaze

Serves: 4 portions

 

INGREDIENTS · 1 whole chicken · Olive oil 50ml · Salt 20gms · Lemon 50gms · Black pepper 30gms · Green beans 100gms · Mushroom 100gms · Corn 100gms · Honey 30ml · Lemon salt 30gms · Butter 50gms · Oil for cooking 50ml


METHOD

1. Marinate the cleaned chicken with salt, black pepper, lemon rind, olive oil and lemon juice.

2. Cook the other vegetables.

3. Make a glaze with chicken bones, mushroom stocks, honey and lemon salt

4. Transfer the chicken to a roasting tray with butter.

5. Add fresh lemon juice and pour a spoon of glaze on the chicken

6. Cook the chicken in oven for 20 – 25 minutes. Do check the chicken so it is completely cooked

7. For final platting – place the vegetables and cooked chicken on the plate and pour some hot glaze on top.

8. Serve hot
