Garlic flavored spinach leaves cooked in delicious gravy
Serves: 10 portions
INGREDIENTS
· Blanched spinach 4kg
· Ghee 150ml
· Salt 10gms
· Chopped onion 60gms
· Cumin powder 40gms
· Green chili 50gms
· Chopped garlic 150gms
· Chopped ginger 75gms
· Red chili powder 30gms
· Fresh cream 150ml
METHOD
1. Blanched spinach, then make a puree & keep it aside.
2. Heat ghee in a handi, add cumin powder, garlic, onion, ginger, green chili and all the dried masala.
3. Then add spinach puree and chopped blanched spinach in a ratio of 40 puree and 60 chopped spinach to it.
4. Saute till the mix becomes thick.
5. Garnish with ginger juliennes and cream.
6. Serve hot.
