Kothimbir Wadi


Kothimbir Wadi is a yummy Maharashtrian snack made of besan, coriander leaves and spices. Kothimbir in Marathi translates to coriander leaves.

Serves: 4 portions


 

INGREDIENTS

  • Coriander leaves 300gms

  • Besan 100gms

  • Rice flour 50gms

  • Green chilli 10gms

  • Garlic paste 10gms

  • Red chili powder 10gms

  • Turmeric powder 10gms

  • Cumin seeds 5gms

  • Sesame seeds 5gms

  • Salt to taste

  • Water as required

  • Oil 200ml

METHOD

1. Rinse the coriander bunch with water. Spread it on a paper tower and let it dry completely.

2. Add besan, rice flour, green chili, garlic paste, red chili powder, turmeric powder, cumin seeds, sesame seeds, salt in a mixing bowl.

3. Add very little water gradually in the bowl and make a thick dough.

4. Make rolls with the dough.

5. Put the wadi rolls in a steamer. Make sure you keep a distance between each roll as the wadis puff up after steaming.

6. Let it steam for 15-20 minutes.

7. Cut the rolls into pieces.

8. In a pan, heat oil for deep frying. Once the oil is heated, reduce flame to medium.

9. Fry the wadis till they turn golden brown.

10. Serve with pili mirch ki chutney.
