Kosha Mangsho


Bengali Kosha Mangsho or Mutton Kosha is a delicious spicy Bengali Mutton Curry that is slow-cooked over low flame.


 

INGREDIENTS

· Lamb 1.5kg

· Chopped onions 600gms

· Chopped green chillies 30gms

· Chopped coriander leaves 20gms

· Ginger garlic paste 50gms

· Cinnamon 10gms

· Cloves 1gm

· Cardamom 2gms

· Turmeric 5gms

· Red chilli powder 10gms

· Jeera 10gms

· Salt 10gms

· Fresh tomato puree 250ml

· Sugar 20gms

· Ghee 20ml

· Oil 30ml

· Curd 250ml

· Roasted cumin powder 5gms

METHOD

1. Heat oil and ghee and let the whole garam masala and cumin crackle.

2. Add onions and cook them on a very low flame, till they turn light brown.

3. Add ginger garlic paste, chopped chillies and lamb. Also, add red chilli powder, tomato puree and whisked yogurt.

4. Cook the ingredients till the lamb is tender and soft.

5. Finally add roasted cumin powder and chopped coriander.
