Kheer is an Indian pudding made with milk, sugar and rice. It is a very popular dish to be consumed during celebrations.
Serves: 10 portions
INGREDIENTS
· Milk 1.5L
· Rice 100gms
· Sugar 100gms
· Almonds 50gms
· Cardamom powder 5gms
· Raisins 30gms
METHOD
· Take rice and wash it well. Soak it in water and keep aside.
· Take milk in a heavy bottom pan. Allow it to boil.
· Once it starts to boil, drain the rice and add it to the milk.
· Add sugar once the rice starts to cook.
· Let the rice cook in the milk. Keep stirring well so that the rice does not stick to the pan.
· Add in soaked raisin and sliced almonds.
· Add in freshly powdered green cardamom.
· Once the rice is cooked completely, remove from heat.
· Serve as preferred, either hot or cold.
CHEF’S TIPS
· You can add a few strands of saffron to the milk. It enhances the flavours.
· Along with raisin or almonds, you can also add sliced pistachio or crushed cashews to the kheer.
· To make it creamier, you can use full fat milk or even add condensed milk.
