Jhinga Tawa Masala

Prawn curry cooked in a flat cast-iron griddle

Serves: 10 portions


 

INGREDIENTS

· 18-22 prawns 1.8kg

· Diced onion 200gms

· Tomato (grated) 150gms

· Rice bran oil 60ml

· Salt 30gms

· Black pepper 15gms

· Coriander powder 30gms

· Cumin powder 20gms

· Red chilli powder 20gms

· Red chilli paste20gms

· Lemon juice 50ml

· Butter 40gms

· Chopped garlic 40gms

· Fresh coriander 100gms

METHOD

1. Wash the prawns and dry them

2. Marinate the prawns with salt and lemon juice

3. Heat oil in a pan, add diced onion and sauté

4. Add prawn and sauté over medium heat for some time

5. Add the dried spice and saute the prawns.

6. Remove the prawns from the pan.

7. In the same pan, add oil, garlic and cook the tomatoes with the dried spices

8. Add the prawns back to the pan .

9. Cook it nicely till the prawns are covered in gravy

10. Finish the dish with lemon juice, chopped coriander, black pepper
