Gulab Jamun


Gulab Jamun is one of India's most popular desserts. These deep-fried dumplings made of dried milk are dipped in a rose-cardamom flavored sugar syrup.

Serves: 4 portions

 

INGREDIENTS:

· Chikna Khoya 475gms

· Flour 50gms

· Sugar 1kg

· Cardamom powder 5gms

· Ghee for frying 2kg


METHOD:

1. Take Khoya in a bowl and mash it well until there are no lumps.

2. Whisk Refined Flour, Baking Soda in a bowl and mix it along with Khoya.

3. Add freshly-powdered green cardamom.

4. Mix all the ingredients well until there and no lumps and the mix has a fine texture.

5. Make smooth small balls from the dough.

6. Heat Oil/Ghee, reduce the flame to low. Add the balls and fry them until they become golden brown in colour.

7. Toss the balls frequently in oil to get an even colour.

8. When they are done, remove them from the oil and drop them into the Sugar Syrup.

9. Let the fried Jamuns soak in the sugar syrup for at least 1-2 hours.

10. Serve hot 0r cold as per preference.

CHEF’S TIPS

1. Addition of a pinch of salt into the dough will balance flavours.

2. Kneading the dough lump-free is essential for a smooth taste of the gulab jamuns.

3. Almonds or Pistachio slivers can be used as garnishes.
