Gujarati Kadhi


The Gujarati version of kadhi is a sweet and spicy curd with besan fritters.

Serves: 4 portions


 

INGREDIENTS

· Curd 300gms

· Besan 150gms

· Ginger 5gms

· Green chili 10gms

· Ghee 40ml

· Sugar 50gms

· Cumin seeds 5gms

· Methi seeds 5gms

· Dried red chili 4gms

· Curry leaves 2gms

· Chopped coriander leaves 5gms

· Salt to Taste

· Cinnamon stick 2pcs

· Cloves 5gms

· Hing 4gms

· Water 1L

METHOD

1. Take yogurt in a pan. Add besan, ginger, green chilies, sugar and salt.

2. Whisk it well and make sure there are no lumps.

3. Add water and mix

4. Switch on the flame at medium heat and bring to boil. Keep stirring continuously.

5. In another small pan, heat ghee. Add curry leaves, mustard seeds, cumin seeds, hing and methi.

6. Then, add dried red chillies, cinnamon sticks, and cloves.

7. Add this seasoning to the kadhi and mix well. Let it simmer for another 30 minutes.

8. Add coriander as garnish and serve hot.
