Gajar Ka Halwa



Gajar ka Halwa is a carrot-based dessert pudding made by simmering carrots with milk and sugar. It can be consumed both hot or cold.

Serves: 10 portions


 

INGREDIENTS

· Carrots grated 1kg

· Milk 1L

· Daanedaar Khoya 200gms

· Sugar 200gms

· Green cardamom powder 10gms

· Crushed cashews 30gms

· Raisins 30gms

· Ghee 10gms

METHOD

1. Peel and grate carrots in food processor OR with hand grater.

2. Heat ghee in thick bottom pan or kadhai.

3. Add grated carrots and sauté it well till carrots are almost dry.

4. Add milk and cook for 8 – 10 minutes, keep stirring in between.

5. Add sugar and cook till milk dries out, keep stirring in between.

6. Add freshly powdered green cardamom to it.

7. Add a little ghee in another thick bottom pan and fry khoya till it turns light brown.

8. Mix khoya in carrot and cook for another 2 – 3 minutes, keep stirring continuously.

9. Add in previously soaked and crushed cashews and raisins and mix well.

10. Gajar Ka Halwa is ready to be served.

CHEF'S TIPS

1. For a tastier Gajar ka Halwa, you can add sliced almond into the pan.

2. You can garnish it with chopped or crushed pistachio.
