Phirnee is a classic creamy sweet pudding made with powdered rice, milk, almonds, saffron and cardamom.
INGREDIENTS
· Milk 1L
· Rice flour 70gms
· Sugar 200gms
· Almonds, blanched and slivered 50gms
· Kewra 10gms
· Green cardamom powder 1gm
· Water 100ml
METHOD
1. Take rice in a bowl and wash it thoroughly. Spread it on kitchen towel or any surface that
2. absorbs water. Let it dry.
3. Once the rice is dried, crush the rice in a dry mixer. (The texture should be that of semolina).
Take a heavy bottom pan and add milk to it. Let it boil.
4. Upon boiling, take two spoons of it in a bowl and soak saffron in it.
5. Add the rice to the boiling milk. Allow it to cook.
6. Add sugar. Stir occasionally
7. Add in the saffron milk to it and stir.
8. Add freshly powdered green cardamom and blanched and sliced almond. Mix well.
9. Add a bit of kewra.
10. Once the desired consistency is achieved, remove from flame and set it in portion bowls.
CHEF’S TIPS
1. For best experience, set and serve phirnee in small earthen pots or clay made pots.
2. Rose petals and sliced pistachio can be used to garnish the phirnee.
