Caprese Salad


Caprese salad is an Italian salad, made of sliced fresh cheese, tomatoes, and basil, seasoned with salt and olive oil. The salad features colours of the Italian flag: red, green, white

Serves: 4 portions

 

INGREDIENTS

  • Cheese Mozzarella 480gms

  • Blanched tomato 480gms

  • Salt 30gms

  • Black pepper 25gms

  • Basil fresh 15gms

  • Olive oil 75ml

  • Pesto 75ml

  • Balsamic vinegar 60ml

  • Lettuce 100gms For the Pesto

  • Basil 100gms

  • Garlic 30gms

  • Pine nut 20gms

  • Parmesan 30gms

  • Olive oil 50ml

METHOD

1. Marinate the tomatoes with salt, pepper and balsamic.

2. Marinate the cheese with basil, olive oil and black pepper

3. Arrange alternatively on the plate.

4. Drizzle pesto on top

5. Garnish with lettuce leaves.

6. Drizzle some olive oil and balsamic on the leaves

7. Serve chilled

FOR THE PESTO

Mix all the ingredients in a blender until well ground. Keep in airtight container away from light. Keep chilled.
