Tender mutton pieces cooked in a fried onion based gravy
Serves: 10 portions
INGREDIENTS
· Lamb boti 1.1kg
· Lamb nalli 1.1kg
· Ghee 300gms
· Salt 40gms
· Yellow chili 20gms
· Red chili paste 20gms
· Turmeric powder 40gms
· Coriander powder 20gms
· Lemon juice 20ml
· Fried onion 1kg
· Tomato puree 400gms
· Ginger garlic paste 60gms
· Mutton stock 2L
· Fresh coriander 40gms
· Bay leaf 6gms
· Cloves 5gms
· Black cardamom 5gms
· Cinnamon 5gms
METHOD
1. Heat ghee in a pan. Add whole garam masala and let in crackle.
2. Add the lamb boti and nalli and saute it with fried onions and ginger garlic paste.
3. Add all the spices, saute well and then add the yellow chili and tomato puree.
4. Add the mutton stock and let it cook for some time.
5. Garnish with fried onions and coriander leaves.
