
Bhatti da kukkad is, spicy grilled chicken dish from Punjab. The most authentic way of preparing this dish is by roasting the chicken in a clay oven, also known as a Bhatti.

INGREDIENTS
Whole coriander 50gms
Cumin 40gms
Cinnamon stick 30gms
Clove 15gms
Nutmeg 1pc
Black cardamom 40gms
Green cardamom 20gms
Bay leaf 20gms
Star anise 20gms
Whole Chicken 1.8kgs
METHOD
Bhatti Masala:
Roast the all spices separately, then mix all together and grind till fine powder
For the chicken:
2. Marinate the chicken pieces with half the spice mix prepared earlier.
3. Rub the cheese and yogurt, along with all other ingredients & make a marination.
4. Add chicken pieces in the marination & keep aside for 2 hours.
5. Roast it in a moderately hot tandoor for 8-10 minutes or on an oven at 180
degrees for 15 minutes
6. Serve hot with onion salad and saffron chutney.
