Bhatti da Kukkad

Bhatti da kukkad is, spicy grilled chicken dish from Punjab. The most authentic way of preparing this dish is by roasting the chicken in a clay oven, also known as a Bhatti.

Serves: 10 portions


 

INGREDIENTS

  • Whole coriander 50gms

  • Cumin 40gms

  • Cinnamon stick 30gms

  • Clove 15gms

  • Nutmeg 1pc

  • Black cardamom 40gms

  • Green cardamom 20gms

  • Bay leaf 20gms

  • Star anise 20gms

  • Whole Chicken 1.8kgs

METHOD

Bhatti Masala:

  1. Roast the all spices separately, then mix all together and grind till fine powder

For the chicken:

2. Marinate the chicken pieces with half the spice mix prepared earlier.

3. Rub the cheese and yogurt, along with all other ingredients & make a marination.

4. Add chicken pieces in the marination & keep aside for 2 hours.

5. Roast it in a moderately hot tandoor for 8-10 minutes or on an oven at 180

degrees for 15 minutes

6. Serve hot with onion salad and saffron chutney.
