Begun Bhaja is simply an eggplant fry that is often a part of Bengali thalis as a side dish. Begun Bhaja and Dal Khichdi also makes a delightful combination.
Serves: 4 portions
INGREDIENTS
· Egg plant 800gms
· Red chilli powder 15gms
· Turmeric powder 5gms
· Salt 10gms
· Gram flour 20gms
· Mustard oil 500ml
· Red chilli dry 5gms
METHOD
1. Wash and cut the eggplant in thick slices of 1 inch each.
2. Sprinkle salt over the slices and leave them aside. This process will extract moisture from the brinjals.
3. Squeeze out the water and marinate the eggplant slices with turmeric, salt, red chilli powder and gram flour. Leave it aside for ten minutes.
4. Fry the slices in mustard oil till they are golden brown and crispy.
5. Deep fry the whole dry red chillies and place it on top of the fried eggplant slices.
