Bebinca is a traditional Indo-Portuguese dessert. It is a seven-layer pudding with flour, sugar, ghee and coconut milk as the main ingredients. It is also known as bibik.
Serves: 4 portions
INGREDIENTS
· Coconut milk 150ml
· Sugar 250gms
· Egg Yolks 100gms
· Refined flour 100gms
· Nutmeg 1gm
· Ghee 150gms
METHOD
1. Mix refined flour, sugar and egg yolks well into the coconut milk. Stir the mixture till the sugar has dissolved. Then add nutmeg powder and keep it aside.
2. Heat ghee in a container. Then pour a cup of batter, and bake it till it is brown.
3. Add another spoonful of ghee and a cup full of batter. Cook it again under a salamander and repeat till all the batter is used up in layers.
4. Bake and overturn the Bebinca.
