Sukhi Bhaji is a traditional dry potato dish popular in Maharashtra and Goa. It is usually eaten as an accompaniment to an Indian bread, like tawa roti.
Serves: 4 portions
INGREDIENTS
Peeled boiled potato cubes 800gms
Turmeric powder 5gms
Green chillies 40gms
Cumin seeds 4gms
Curry leaves 5gms
Mustard seeds 4gms
Hing 4gms
Salt To Taste
Chopped coriander 10gms
Oil 50ml
METHOD
1. Heat oil in a pan. Once the oil gets hot, add mustard seeds. now add cumin seeds, green
chilies, curry leaves. Fry for 2 minutes.
2. Add turmeric powder, hing and boiled potatoes.
3. Cook for 5 minutes with a cover on the pan.
4. Now add salt mix well. Cook for 2 – 3 minutes on low flame.
5. Finally, add chopped coriander leaves.
6. Serve warm.
