Basundi is a sweet dish from the Western Indian region. It is a sweet condensed milk flavoured with saffron and cardamom, and is very similar to the North Indian Rabri.
Serves: 10 portions
INGREDIENTS
· Milk 2L
· Saffron 1gm
· Green cardamom 10gms
· Nutmeg powder 5gms
· Chiroli nuts 20gms
· Sugar 200gms
METHOD
1. Take a broad, heavy bottom pan and add milk to it. Heat the pan and allow the milk to boil.
2. Take out 2 tablespoon warm milk from it in a bowl and soak the saffron strands in it.
3. After one boil, lower the flame to medium and allow the milk to cook.
4. Add the saffron milk to it followed by sugar and chironji.
5. Allow the milk to simmer for another 5 – 7 minutes.
6. Now add the freshly pounded green cardamom and nutmeg powder and put off the flame.
7. Delicious and flavourful basundi is ready to serve.
CHEF’S TIPS
1. Use fresh full cream milk for better results.
2. If you do not have Chironji seeds, blanched sliced almonds can be used.
3. Freshly pounded cardamom and nutmeg makes the dish very flavourful.
