Aloo Nazakat

Aloo Nazakat is a Tandoori appetizer with crispy fried potato shells filled with a spiced potato mixture. It is a potato lover’s dream come true.

Serves: 10 portions


 

INGREDIENTS

· Potato 1.2kgs

· Salt 30gms

· Ghee 60ml

· Cumin 20gms

· Oil 50ml (for cooking)

· Oil 1L (for frying)

· Sesame seed 30gms

· Red chilli powder 20gms

· Chop green chillies 15gms

· Ginger chopped 15gms

· Garam masala 30gms

· Green peas 300gms

· Crush fried potatoes 150gms

· Pomegranate seeds 30gms

· Raisin 40gms

· Panko bread crumb 200gms

METHOD

Filling:

1. Heat oil in a handi

2. Add cumin and sauté till it crackles

3. Add green peas, crushed fried potatoes, pomegranate seeds, raisins and mix well

4. Check seasoning and keep it aside for cooling

5. Heat oil and fry all the trimmings of potatoes

Cooking:

1. Blanched and then deep fry the barrel shaped potatoes

2. Stuff them with filling

3. Coat them with sesame seed and panko bread crumb.

4. Cook in a moderately hot tandoor on a skewer, for over 8 to 10 minutes

5. Add some chopped coriander on top
