Arsa is a sweet Pahari delicacy that is prepared on special occasions like weddings and traditional celebrations. It is one of the most savoured desserts for the people of Uttarakhand.
Serves: 4 portions
INGREDIENTS
· Rice 250gms
· Jaggery 200gms
· Ghee 15gms
· Green cardamom 2 pcs
· Mustard oil for frying 250gms
· Cooking soda 1 pinch
METHOD
1. Soak the rice overnight. Drain out the water and let it dry for some time and then grind it to a fine powder.
2. Heat pan and add jaggery to make a syrup and then add green cardamom. Let it simmer for 10 minutes.
3. Now, mix the rice powder into the syrup to make a thick dough.
4. Make small balls and roll them in the shape of small doughnuts.
5. Heat oil in a pan and fry the doughnuts.
6. Take out the fried doughnuts in paper to soak up the extra oil. Serve hot.
