Momos are stuffed Asian-style dumplings that are usually served with a spicy sauce and soup.
Serves: 4 portions
INGREDIENTS
· Refined flour 240gms
· Baking powder 2gms
· Salt 1gm
· Water 50ml
· Chicken mince 500gms
· Onion 250gms
· Pepper 5gms
· Salt 5gms
· Garlic 5gms
· Soya sauce 10ml
· Vinegar 5ml
METHOD
1. Knead the refined flour, baking powder and salt together into firm dough. Cover and keep aside for 30 minutes.
2. Divide the dough into small balls. Roll the dough into very thin 4-5inch rounds.
3. In a bowl mix all the ingredients of the chicken filling. Keep aside.
4. Take each round piece and place some filling in the center.
5. Bring the edges together and twist to seal it.
6. Steam in a steamer for about 10 minutes and serve hot with chili sauce.
CHEF’S TIPS
1. You can make vegetable momos by combining grated cabbage and carrot along with chopped onion and garlic, keeping rest of the spices the same. Add cornflour for binding.
2. To make the chilly chutney/ sauce, cut the red chilies and soak them in water for about two hours. Cut up into small pieces and soak in the vinegar for one to two hours. In a blender, add the chili, garlic, oil, salt and sugar. Blend into a smooth paste.
