Mango Gazpacho

Mango Gazpacho is a classic Hispanic summer soup, which is blended with cucumber, bell pepper, onion and garlic. The taste of the mango is subtle and adds a tangy sweet flavor to the soup, owing to the acidity of the fruit.

Serves: 4 portions


INGREDIENTS

· Mango 400gms

· Cucumber 300gms

· Yellow bell pepper 200gms

· Onion 100gms

· Garlic 25gms

· Toasted focaccia 100gms

· Balsamic vinegar 50ml

· Black pepper 3gms

· Salt 3gms

· Olive oil 50ml

· Tabasco 5ml

· Basil 5gms

Garnish:

· Mango dices 80gms

· Feta/Ricotta cheese 80gms

· Basil 2gms

Method: -

1. Soak the toasted bread with balsamic vinegar

2. Mix all the ingredients in a bowl and keep aside for 30 minutes

3. Blend the ingredients in a mixer with the soaked bread

4. Strain the soup and keep for chilling for 30 minutes

5. Serve chilled with Mango dices, herbed ricotta or feta cheese and basil leaves
