Hariyali Paneer Tikka


Paneer Hariyali Tikka is a North Indian recipe made using paneer, coriander leaves, and mint.

Serves: 10 portions

 

INGREDIENTS

· Malai paneer 1.8kg

· Salt 30gms

· Hung yogurt 200gms

· Spinach puree 300gms

· Mint 100gms

· Green chili 30gms

· Mustard oil 60gms

· Cream 30gms

· Tomato dices 100gms

· Javitri elaichi powder 30gms

· Onion dices 100gms

· Garam masala 30gms

· Capsicum dices 100gms

· Red chili powder 30gms

· Lemon juice 60ml

· Ghee 100ml


METHOD

1. Cut paneer and vegetables into dices

First marinade:

2. Marinate paneer and vegetables with salt and all the dried spices.

Green marinade:

3. Boil spinach, mint and green chili together and make a puree.

4. Heat oil in a pan and saute it till it becomes thick.

5. Keep it aside and let it cool for some time.

Second marinade:

6. Take hung yogurt, add mustard oil, the first marinade and the green marinade. Mix well.

7. Add the marinated paneer and vegetables and keep it aside for at least one hour.

Cooking:

8. Place the paneer and vegetables on the skewers.

9. Roast in a moderately hot tandoor for almost 10 minutes.

10. Place them in a bowl and add ghee and lemon juice.

11. Serve with mint chutney and masala onions.
