Gosht Gilafi Seekh Kebab


Gilafi Seekh Kebab is defined as marinated minced meat placed over a Shewer in cylindrical shape. The kebabs are cooked with a cover on top, hence the name “gilafi”

Serves: 10 portions


 

INGREDIENTS

  • Lamb boti 1.5kg

  • Salt 30gms

  • Lamb fat 120gms

  • Chopped green chilies 20gms

  • Chopped ginger 20gms

  • Chopped garlic 30gms

  • Red Chili powder 40gms

  • Garam Masala 50gms

  • Coriander Root 50gms

  • Pepper chopped 400gms

  • Elaichi powder 30gms

  • Chopped coriander 30gms

  • Lemon juice 30gms

  • Peppers 6pcs

  • Onion chopped 200gms

  • Fried Onion 50gms

METHOD

1. Clean excess of fat from the lamb boti

2. Dry it and mix all the ingredients except peppers and onion. Then let it rest for 30 minutes.

3. Take out this mix from mincer for at least 3 times.

4. Using the wet hand spread the mince ball by pressing each along the length of the skewers.

5. Apply chopped peppers and onions on the skewers.

6. Roast it in a moderately hot tandoor for 8-10 minutes.

7. Remove the kebabs from the skewers and baste with melted butter or ghee.

8. Serve with onion salad.
