Sabudana khichdi is an Indian dish made from soaked sabudana. It is typically prepared in parts of Western India such as Maharashtra, Karnataka, Uttar Pradesh, and Gujarat where it is hugely popular as a fasting food.
Serves: 500gms
INGREDIENTS
· Sabudana 500gms
· Potato 200gms
· Peanut 100gms
· Cumin seeds 10gms
· Salt to taste
· Coriander leaves 20gms
· Ghee 100gms
· Green chilli 25gms
· Pomegranate seeds 10gms
METHOD
1. Soak sabudana in water of same depth for minimum six hours.
2. Take ghee in a kadhai and heat it.
3. Add cumin in ghee and crackle it. Add chopped green chilli in it.
4. Add the soaked sabudana to it.
5. Add boiled and diced potatoes.
6. Season it with salt (fasting salt).
7. Add roasted and crushed peanuts.
8. Garnish with chopped coriander (optional) and pomegranate seeds.
